THE ABC'S OF ESSENTIAL FATTY ACIDS (EFAs)
Essential Fatty Acids (EFAs) are necessary fats that the body cannot
synthesize, and must be obtained through diet. There are two families
of EFAs: Omega-3 and Omega-6. These are considered polyunsaturated
fats. Omega-9 is also necessary yet "non-essential" because the body
can manufacture a modest amount on its own, provided other essential
EFAs are present. Omega-3 fatty acids are derived from Linolenic Acid,
Omega-6 from Linoleic Acid, and Omega-9 from Oleic Acid.
EFAs
support the cardiovascular, reproductive, immune, and nervous systems.
The human body needs EFAs to manufacture and repair cell membranes,
enabling the cells to obtain optimum nutrition and expel harmful waste
products. A primary function of EFAs is the production of
prostaglandins, which regulate body functions such as heart rate, blood
pressure, blood clotting, fertility, conception, and play a role in
immune function by regulating inflammation and encouraging the body to
fight infection.
Unfortunately,
EFA deficiency is common in the United States, particularly Omega-3
deficiency. For adults, the minimum healthy intake of Omega-3 and
Omega-6 is 1.5 grams of each, per day. Typical Western diets tend to be
low in Omega-3, therefore it is important to get a sufficient amount
through food sources or supplements.
Omega-3 (Alpha-Linolenic Acid)

Omega-3s are found in: cold-water fish oils, flax seeds & flax
seed oil, walnuts, pumpkin seeds, brazil nuts, salmon and other fish,
avocados, canola oil, and some leafy green vegetables.
* Omega-3s are used in the formation of cell walls,
making them supple and flexible, and improving circulation and oxygen
uptake with proper red blood cell flexibility and function.
Omega-6
(Linolic Acid)
* Omega-6s are found in: flax seeds & flax
seed oil, grape seed oil, acai, pumpkin seeds, pine nuts, sunflower
seeds, olives & olive oil, and some fruits and vegetables.
* Although most Americans obtain an excess of Omega-6
(Linoleic Acid), often it is not converted properly in the body because
of metabolic problems caused by diets rich in sugar, alcohol, or trans
fats from processed foods, as well as, smoking, pollution, stress,
aging, viral infections, and other illnesses.

Q: CAN EATING FAT PREVENT INJURIES?

Even though you may be limiting your fat intake to reach your physique
goals, your body needs fat to stay healthy. An ultra-low-fat diet may
increase your chances of getting injured - especially if you run a
minimum of 20 miles a week. A recent study out of the University at
Buffalo (New York) found that women who followed a low fat diet (less
than 27% of calories from fat) had MORE lower body injuries. In
addition, the researchers discovered that fat intake was the best
dietary predictor, correctly identifying 64% of future injuries. Moral
of the story... Its okay to eat fats, but pick your fats wisely. Reach
for unsaturated fats and essential fatty acid sources, like olive oil,
nuts, and sushi!
Q. YOU'RE EATING POULTRY: IS WHITE MEAT BETTER THAN
DARK MEAT?
A.
What gives the dark meat of chicken and turkey its color is higher
amounts of myoglobin. Myoglobin provides oxygen to working muscles.
Chickens and turkeys tend to walk, not fly long distances, so their leg
or thigh meat, is saturated with myoglobin while their breast meat and
wing meats tend to be paler in color due to lower levels of myoglobin.
Compared to white meat, dark meat has only a few more calories and only
an extra 2 grams of fat per 3 ounce serving. In addition, it has some B
vitamins, muscle building proteins, plus more zinc and iron than white
meat. So go ahead, have the dark meat... Its just as good if not better
than white meat, just leave the skin behind.
